Preparation
Wash the shrimp well and remove their head.
Mix the orange juice, mustard, half the olive oil, a bit of salt and freshly ground pepper in a bowl.
Marinate the shrimp with the mixture for 20-25 minutes, then place them in a deep non-stick pan and fry over medium heat for 2-3 minutes. Shrimp don’t need much frying because they dry out and lose all their taste.
Serve in individual dishes accompanied with fresh salad and pour over the juice left in the pan.
