Ingredients

Ingredients:
  • 3 grated zucchini
  • 1 tbsp salt
  • 1 cup of sliced leeks
  • 1/2 cup of finely chopped mint
  • 1 cup of flour
  • 2 tbsp corn flour
  • 2 eggs
  • 1 cup of grated Parmesan
  • 1 tsp pepper
  • 1 tbsp salt
  • plant-based oil for frying
For serving:
  • 3P Aioli Sauce
  • spring onions, finely chopped
3p-mayo

Preparation

1. Place the grated zucchini in a large bowl and add 1 tbsp of salt. Mix well and let it sit for 10 minutes.

2. After 10 minutes, squeeze the zucchini to remove excess liquid and transfer them to a clean bowl.

3. Add the leeks, mint, flour, corn flour, eggs, Parmesan, pepper, and the remaining tbsp of salt. Mix well, until all ingredients are thoroughly combined.

4. Heat enough vegetable oil in a large frying pan over medium-high heat.

5. Using a large spoon or ice cream scoop, take portions of the mixture and form them into meatball-sized balls. Fry the zucchini balls until golden brown on both sides, approximately 3-4 minutes per side.

6. Once cooked, remove them from the pan and place them on absorbent paper to drain excess oil.

7. Serve with 3P Aioli Sauce and sprinkle with chopped spring onions.
